Growing up in Southern California, elotes came around as frequently as the ice cream truck. Usually accompanied by a bell or a bicycle horn, a man (or woman) would come walking down the street with a whole cart full of sweet delicious corn yelling “elotes, elotes” and I’d ask my mom for a dollar and run outside to enjoy a delicious mid-day treat.
Combine my fondness for this childhood favorite with my love for all things colorful, and it’s only natural that I was beside myself with excitement when I heard about a restaurant in Tijuana that serves what they coined as “unicorn elote.”
Unable to resist the temptation of making my own version of this magical looking snack…here we are. It may not be authentic, but they’re as delicious as they are adorable. And super easy to make at home!
