Today marks the 14th anniversary of Pixar’s Finding Nemo! I realized this at about 9pm last night, just as I was beginning to develop a sweet tooth. The kids were already asleep and I’ve never been much of a late night muncher myself, so while I wanted to satisfy my craving, I also wasn’t prepared to indulge in anything too heavy or sugary. With that (and Nemo) in mind, I began to search my kitchen for the perfect snack…but what I found was that “grocery shopping” has moved its way up to the top of my to-do list. Luckily, I also found plain greek yogurt, a couple oranges, and some leftover chocolate chips… and thus, this grown-up sweet tooth solution (aka the “Lucky Fin” Parfait) was born.

Growing up in Southern California, elotes came around as frequently as the ice cream truck. Usually accompanied by a bell or a bicycle horn, a man (or woman) would come walking down the street with a whole cart full of sweet delicious corn yelling “elotes, elotes” and I’d ask my mom for a dollar and run outside to enjoy a delicious mid-day treat.

Wilderness Explorer Backyard Camp Out

This post is a throwback to a fun campout we had with the kids last summer! I wasn’t blogging regularly back then, but we had so much fun that I thought it was definitely worth sharing in honor of this week’s Disney Family #DisneyWeekend theme being back yard camp out! We made our campout a Wilderness Explorer theme, because not only do we love the movie Up (and let’s face it, ALL the Pixar movies), but I had the idea of adding a bit of learning to the experience by having the kids participate in different activities to earn Wilderness Explorer “badges” (stickers) just like Russel has in the movie!
